Ingredients

2 cups of all purpose flour or almond meal
1/3 cup of honey (or 1/2 cup of brown sugar)
1 tbsp baking powder
1tsp baking soda
1/2 tsp salt
3/4 cup of dark chocolate chips or block of chocolate crushed into pieces
1/2 cup of JT’s Coconut Oil
1/4 cup of milk
1tsp vanilla extract
2 cups mashed ripe  bananas (about 4-5 large banana)
2 eggs
your choice of JT’s Coconut Chips

Banana Choc Chip Muffins

There is nothing better than the smell of freshly baked banana muffins straight from the oven. This recipe has been shared with us by Mayumi from @mumsy_style and it is definitely a winner!

METHOD: 

Preheat oven to 180 C and grease a 12 cup muffin tin with butter.
In a large bowl, combine flour honey, baking powder, baking soda and salt. Stir in dark chocolate chips.
In a small bowl, blend bananas, coconut oil, milk, eggs and vanilla.
Add banana mixture to the large bowl. stirring until combined.  Be careful not to over mix.
Fill muffin cups and sprinkle JT’s coconut chips on the top.
Bake in the pre heated oven for approx 15-22 min or until golden brown and a toothpick inserted into the centre comes out clean.
