• 1 cup oats
  • 1tbsp chia seeds
  • 1tbsp buckwheat groats (optional)
  • 1 cup Jt’s Coconut Milk
  • 1 green apple, grated
  • 1 tbsp lemon juice
  • 2tbsp yogurt (or 1tbsp coconut milk if lactose intolerant)
  • Jt’s coconut chips
  • fresh seasonal fruit
  • honey

Coconut Bircher

The combination of coconut milk and yoghurt makes for deliciously creamy Bircher. It can be stored in the fridge for up to 3 days so make ahead of time for a quick, easy breaky!


Combine oats, chia, buckwheat and coconut milk in a bowl. Cover and place in fridge over night.

In the morning stir through grated apple, lemon juice and yoghurt.

Divide between two bowls and top with coconut chips, fresh fruit and a little drizzle of honey.
