Ingredients

  • 500mL JT’s Coconut Milk
  • 6 tbsp Chia seeds
  • 2 tbsps goji Berries (optional)
  • 2 tbsp sunflower seeds (optional)
  • 1tbsp maple syrup
  • 1 cup frozen raspberries
  • Yoghurt of choice (my favourite is coyo)
  • Desired toppings: coconut, goji berries, nuts, seeds etc

Coconut Chia Pudding

Method:

In a large container use a whisk to combine the coconut milk and chia seeds. Then stir through the goji berries, sunflower seeds and maple syrup.

Cover container and leave to soak in the fridge for 4 hrs (or overnight).

Once the chia has been soaked and become a thick pudding, divide it amongst glasses.

Meanwhile, allow for the frozen berries to defrost, then crush them with the back of a spoon.

Divide the Berries amongst the glasses then top with yogurt and your choice of toppings!
