This is perfect for topping off smoothies, fruit bowls and acai bowls
Line a big baking tray with baking paper and wipe with a bit of JT’s coconut oil. Pour Oats, mashed banana, melted coconut oil, chia seeds, flax seeds, agave and vanilla essence in and mix well (If you want your granola sweeter and ‘covered’ add some more agave/ honey or maple syrup). Bake in oven at 175 for 20 minutes turning every 5 minutes of so. Depending on how big your tray is you may need to cook for half an hour. Add all your dried fruit and nuts to the mixture and stir. Place back into oven and cook for a further 20 minutes, turning every 5 minutes or until golden brown. Allow to fully cool down before moving to an air tight container and keeping for up to 4 weeks.
