It sounds strange adding coconut water to a savoury soup but it totally works and brings out the natural sweetness of the pumpkin. Homemade stock is always best but if you don’t have any you can purchase some great stock from the health food store or your local providore.
In a large pot melt the coconut oil and gently fry the chopped onions until translucent. Add the rest of the ingredients and bring to boil. Once boiling turn to medium heat until pumpkin is tender and then turn off the heat. Add seasonings to taste and blend with a stick blender until smooth.
Enjoy and add garnishes if desired.
