These delicious choc chip bikkies are totally paleo and they make a yummy snack for after exercise, morning or afternoon tea.
Blend all dry ingredients for 30 seconds in a food processor (except for the cacao nibs). Add the softened butter and coconut oil in chunks and blend until mixture makes a dough and is evenly mixed through. Use a teaspoon to make rolled balls (wet your hands to stop the mixture sticking) and press down on to a lined baking tray leaving a little room between each. Place into a preheated oven at 180 degrees for around 10 minutes until they are golden.
Leave to cool as bikkies will be soft when they come out and harden as they cool.
Store in an airtight container and consume within 1-2 days.
