Melt one tablespoon of oil in a small frypan on a low heat and saute onion and garlic until tender about 3-4 minutes. Remove and cool.
In a food processor place all ingredients including the onion, garlic and oil mixture and pulse until combined and a soft dough forms. Roll teaspoon sized balls onto a lined baking tray and press down with your fingers or a fork. Top with extra cheese and bake in a 180 degree oven for 20- 22 minutes until golden and cooked through.
