Ingredients

4 chicken thighs
1 tsp of turmeric powder
40g of JT’s Coconut Essence Coconut Chips
2 free range eggs
Rice flour
1 T chia seeds
1 t crushed garlic
1 t cinnamon
1/4 C JT’s Coconut Essence Coconut Oil

Tumeric Coconut Chicken Schnitzel

Turmeric Coconut Chia Chicken Schnitzel

METHOD: 

Trim the chicken thigh fillets then tenderise between two sheets of baking paper.

Coat thighs in rice flour.

Beat 2 eggs then add a dash of water and turmeric, garlic, a teaspoon of cinnamon, salt and pepper. Let the chicken marinate in the beaten egg, water and spices mix.

In a blender or food processor, blend chia seeds and JT’s Essence Coconut Chips.

In a pan heat 1/4 Cup of JT’s Essence Coconut Oil.

NOTE: Coconut Oil can go to a higher heat so be careful not to burn the chicken.

Cook for 3 – 4 minutes on each side until golden brown and cooked through.

Serve with Sauerkraut or your choice of salad.
