These ‘white chocolate’ treats are such a yummy addition to a kids lunchbox (just make sure they stay cold with a freezer pack next to them), a snack on the run or an afternoon energy boost. They are dairy and gluten free and we dare you to stop at just one! They also have a hit of protein and superfood blend from Think Vitality Nutrition. Yum!
Preheat oven to 180 degrees and place chips on baking sheet and bake for 5-10 minutes until coloured (you know have to do this step if you are in a rush just gives chips golden colouring). Melt on a gentle stovetop the cacao butter, coconut oil and rice malt syrup or maple syrup and stir until all is melted and combined. Next mix in the remaining ingredients ensuring that they are all coated and combined well. Spoon into lined muffin cups ensuring that each cup has equal amounts of the coconut chips. Pour over any remaining ‘white chocolate’ mixture at the bottom and freeze for 1- 2 hours until set. Store in the fridge or freezer for 4-5 days. Enjoy! Xx
