  • 1/2 cup of coconut flour
  • 1/2 cup desiccated coconut
  • 1/2 cup vanilla protein
  • 1/3-  1/2 cup of jts coconut water (depending on consistency of mix- coconut flour absorbs moisture)
  • 2 beaten eggs


  • 2 tablespoons of rice malt syrup
  • 2 tablespoons of cacao
  • 3 tablespoons of chia seeds
  • 3 tablespoons of jts organic coconut oil melted
  • 1 1/2 teaspoons of baking powder
  • 1 teaspoon vanilla bean paste
  • Pinch of sea salt (if desired)

Velvety Chocolate Protein Cupcakes

This quick and so easy protein cupckaes with Cocotella will have everyone lining up for more. Best thing is that it is full of beautiful superfood ingredients and protein that is also good for you- what could be better than that!?

*Dairy free
*gluten and wheat free
*refined sugar free 

Mix all ingredients in a bowl until just combined. If mixture is very dry add another few splashes of coconut water to loosen and mix carefully. Spoon into prepared patty cases and bake in a moderate oven at 180 degrees for 15-20 minutes or until cakes spring back when touched (watch them as you don’t want them to burn).

For icing: Once the cakes are cool top mixture on to cakes and sprinkle with cacao nibs. Pop them in the fridge to set and keep in an air tight container for 3-4 days. Enjoy!
